Goldenrod Honey: A Limited-Edition Fall Treat From Our Bees

Raw and Unfiltered: The Natural Beauty of Goldenrod Honey

One of the things that makes our Goldenrod Honey so special is its raw, unfiltered quality. Unlike other commercially processed honey, we don’t heat, pasteurize, or heavily filter it, ensuring that what you’re tasting is exactly what the bees produced. Our honey is also not blended with other types of honey. Though, fun fact, it may contain some wildflower honey because our bees are free roaming and occasionally mix their nectar collection across frames. The only processing it undergoes is a light straining to remove any natural debris, but beyond that, it’s as close to the hive as you can get.

This minimal processing is what allows the honey to crystallize naturally over time. If you find your honey crystallizing, don’t worry—it’s a natural process and a sign that your honey is raw and full of the good stuff that commercial honey processing often removes. You can gently warm it to return it to its liquid state if you prefer, but many people enjoy the spreadable texture that crystallized honey brings.

Exploring the Beauty of Goldenrod Honey: What Makes It So Special?

As a beekeeper, the changing of the seasons marks exciting shifts in the honey that my bees produce. One of the most unique varieties I offer is Goldenrod Honey—a honey that’s harvested in the fall when goldenrod plants are in full bloom. This honey has a story behind it, from its raw, unprocessed nature to its distinct flavor profile. Let’s dive into what makes Goldenrod Honey so special, and why it might just become your new favorite!

What is Goldenrod Honey, and How is It Made?

Goldenrod Honey gets its name from the goldenrod plant, which blooms in the fall. When the goldenrod flowers are in season, the bees gather nectar and pollen from this plant, creating a honey that carries the distinct essence of the season. The process starts with pulling honey-only frames from the hive, ensuring that these frames are not treated for varroa mites. These frames are then spun in an extractor, strained to remove any natural debris, and stored in 5-gallon buckets until it's time to bottle.

Just like all varieties of SlowGold Honey, Goldenrod Honey is raw and retains all its natural goodness, including pollen, enzymes, and flavor, which is why it eventually crystallizes—a sign that it’s untouched and unprocessed!

The Unique Flavor of Goldenrod Honey

Goldenrod Honey has a flavor profile that some people adore, while others find it more of an acquired taste. This dark colored honey variety is known for being bold and slightly earthy, with a bit of a bite compared to milder honeys. Some describe it as having a strong floral or herbal taste, which makes it perfect for those who appreciate more complex flavors.

Goldenrod Honey also has its uses in cooking. It’s particularly popular in baking, especially in bread recipes where its rich flavor can really shine. If you’re someone who loves experimenting in the kitchen, this honey could add a new depth of flavor to your dishes.

Harvesting Goldenrod Honey: A Seasonal Delight

Goldenrod Honey is harvested in the same way as my other honey varieties- what makes it different is when it’s harvested. This honey is collected during the fall, when the goldenrod plant is in bloom. The amount of Goldenrod Honey we can produce each year depends on how much goldenrod grows, making it a bit of a seasonal treasure! Some years, there’s a bounty; in others, less so, depending on how the plants flourish.

The timing of the harvest is essential. If the bees are able to gather plenty of nectar from goldenrod, the honey takes on that distinct goldenrod essence. This seasonal factor adds to the uniqueness of the honey, giving it a limited availability that makes it even more special.

Why Choose Goldenrod Honey?

If you’re someone who values natural, raw, and minimally processed honey, and you're looking for something with strong flavor and versatility in cooking, then Goldenrod Honey is a must-try. Plus, knowing that each jar is a product of fall’s goldenrod bloom makes it feel like you’re tasting a little bit of autumn sunshine!
